Alligator pepper, also known as grains of paradise, is a West African spice with a pungent, peppery flavor. It's made from the seeds and seed pods of the Aframomum danielli, A. citratum, or A. exscapum plant. The seeds are tiny and round, similar to miniature nutmegs. When crushed, the seeds release a floral aroma with notes of jasmine, cardamom, and clove. Alligator pepper can also have nutty, earthy, citrusy, menthol, and eucalyptus notes.
